What is STARCH PHOSPHATE?

Chemical properties

Soluble in cold water (unlike regular starch) and has high thickening power. Can be frozen and thawed repeatedly without change in physical properties.

The Uses of STARCH PHOSPHATE

Thickener for frozen foods; taconite ore binder; in adhesives, drugs, cosmetics; substitute for Arabic gum, locust bean gum, and carboxymethyl cellulose.

Definition

An ester made from the reaction of a mixture of orthophosphate salts (sodium dihydrogen phosphate and disodium hydrogen phosphate) with starch.
