What is Octadecanoic acid, 2,3-bis[(1-oxohexadecyl)oxy]propyl ester?

Description

1,2-Dipalmitoyl-3-stearoyl-rac-glycerol is a triacylglycerol that contains palmitic acid at the sn-1 and sn-2 positions and stearic acid at the sn-3 position. It has been found in ostrich and emu oils as well as cow milk fat.^1,2
