LEMON PEEL GRANULES

Description

Dried lemon peel is derived from fully developed, but not yet fully ripe, lemons. The outer layer of the fruit wall is usually removed in the form of a spiral and dried. The 2-3 mm thick pieces are brownish yellow and dimpled on the outside and whitish on the inside. The granules have a characteristic odor and a spicy, some what acid and slightly bitter taste.
The lemon (Citrus limon (L.) Burm. F.) is produced on shrubs or small trees, 5-10 m in height, generally with reddish branches and 15 cm long, acuminate and in contrast to C. aurantium, scarcely winged leaves. Axillary flowers, single or in small clusters, with petals white on the inside and reddish on the outside, and readily dropped. Yellow, 8-10 locular fruit, narrow to a point at the upper end, are produced.
