What is GELLING AGENTS2?

Description

Gels are a form of matter intermediate between a solid and a liquid. They consist of polymeric molecules cross-linked to form a tangled, interconnected molecular network immersed in a liquid medium. In food systems this liquid is water. The properties of the gel are the net result of the complex interactions between these two components. The water, as a solvent, influences the nature and magnitude of the intermolecular forces which maintain the integrity of the polymer network; the polymer network holds the water, preventing it from flowing away.
