The Uses of TRANS-2-HEXENYL VALERATE
(E)-2-Hexenyl valerate gives power and richness to the conventional esters used in such flavors, and it lends the much desired creamy-buttery note to Rum flavor, although it is by no means a key ingredient.

Preparation
trans-2-Hexenyl valerate is produced by direct estcrification of trans-2- Hexenol with (iso-)Valeric acid, preferably under azeotropic conditions.

Aroma characteristics at 1.0%: green, estry, fruity, apple, green banana and pineapple with slight cognac and winey nuances.
Taste threshold values
Taste characteristics at 1 to 10 ppm: waxy, green, fruity apple, pear and pineapple with a slight waxy floral aftertaste

Soluble in alcohol, Propylene glycol and oils, but poorly soluble in Glycerin.
