What is Potassium Propionate ?

Description

Potassium propanoate or potassium propionate has formula K(C2H5COO). Its melting point is 410 °C. It is the potassium salt of propanoic acid.

Chemical properties

Potassium propionate is a white, crystalline powder with a slightly sour odor. It is hygroscopic, meaning it readily absorbs moisture from the air, which can lead to caking or clumping if not stored properly. The crystals are typically needle-shaped or prismatic in appearance. This compound is highly soluble in water and slightly soluble in ethanol.

The Uses of Potassium Propionate

Potassium propionate is widely used in the food industry, mainly as a preservative. It is commonly added to baked goods, cured meats, cheeses, and various confectionery products to increase their shelf life and prevent the growth of mold and yeast. In addition, it is also used in the production of animal feed and in the pharmaceutical industry as a preservative.

What are the applications of Application

Potassium propionate is the potassium salt of propionic acid. It is used as an antimicrobial agent in bread to prevent germination of some types of bacteria which causes sticky yellow patches to occur. Has been linked with behavioural and learning problems, migraines, headaches and can cause asthma. It is very effective against molds and rope forming bacteria and is preferred in chemically leavened cakes, tortillas, pie fillings. Since Probake? Potassium Propionate does not add sodium to the product, it is very suitable for low-salt recipes.

Purification Methods

Recrystallise it from water (30mL/g) or 95% EtOH. [Beilstein 2 II 217, 2 III 516, 2 IV 701.]
