Colorless crystal or white crystalline powder, odorless, with cool and salty taste. No melting point, relative density 1.857. It is stable in air at room temperature, loses crystal water when heated to 150°C, and decomposes when heated continuously. Insoluble in ethanol, easily soluble in water, the pH value of 5% aqueous solution is 7.6-8.6.
As a Ph regulator and emulsification enhancer, it is used in jams, candies, jelly and ice cream, etc.; it has the effect of relieving sour taste when combined with citric acid; it also has the effect of complexing metal ions.
